
Well, I have to tell you, I hate coconut. Absolutely detest it.
I’ve had a coconut cookie or two in the past that I managed to eat, and they were pretty good. But I hate coconut. Just the mere mention of it makes me turn and run. Few foods in life do that to me, but coconut is definitely one of them. Childhood trauma? Perhaps. But anyway you look at it, I ain’t eatin’ the stuff!
But I do try to bake all the cookies I blog about, so these were no exception. After all, I have to be adult about this. Every cookie deserves a fair chance. Coconut cookies included ~Sigh~
So long story short, I have not personally tried these cookies, but my husband sure did. He likes coconut. He assured me that you couldn’t really taste the coconut. But I wouldn’t believe him.
Even the blogger who posted this recipe says you can’t taste the coconut, and she hates coconut as much as I do. But I just couldn’t bring myself to do it.
So I have to give you my “review” from my husbands input. Apparently, these cookies are really, really good, have lots of great flavor, and there’s very little hint of the coconut… or so I’m told.
Sorry guys, I just couldn’t bring myself to take a bite. I’m a wimp. A big, adult sized wimp.

Are “current” cookies up-to-date or is it that they are electrical? Just kidding — they sound wonderful. Now if I can just find the “currents”!

You can buy currents at any health food store in the bulk section. There may even be a few “main stream” stores that carry them.

Hello,
I would just like to ask if I can use fresh grated coconut for baking or just those in bags found in the supermarket? If i can use fresh ones how long would the cookies shelf life be? I’m a newbie at baking.

I would recommend the stuff from the store. However, I can’t imagine that using fresh coconut would effect the shelf life any more than any other fresh ingredients in the recipe (butter / zest). They should have about the same shelf life.
I asked the blogger who originally did this recipe, and she said she’s never used fresh coconut. She can’t get it in her corner of the world. So she didn’t know if it would have an effect or not.
I know this isn’t much help. I wish I had a more definitive answer. Perhaps somebody reading this will have some experience with baking with fresh coconut?
