
I had some Nutella left over after making those Nutella Alfajores.
I also happened to have some hazelnuts left over from another recipe I tried as well. So these were the perfect recipe to run across.
They are relatively easy to make, but they do take a bit of time. These are not cookies you whip out in under 10 minutes.
I made mine round like a traditional Linzer cookie but I cut out the middle of the top cookie using a small birthday cake cookie cutter (my birthday is this month – yikes! The big 3-5. Oh boy, do I really have to be a grown up now?).
They turned out really cute. And since my birthday isn’t until the 23rd, I decided I would just have to celebrate all month long to justify not giving any of these cookies away.
So how about it? Will you celebrate with me? It’s gonna be a 23 day celebration. Whoo hoo! Bake up a batch of these wonderful Raspberry & Nutella Linzer Cookies at home, and when you bite into the first one, make sure to say “Happy Birthday Tiffany!” I’ll hear you, I promise.

Mmmm, you can’t go wrong with nutella! These look so cute too! These are definitely now next on my cookie experimentation list =)

As part of the TWD baking group we made these last year and I put Nutella in the middle. LOVED them! So what do I get if it’ll be my big 4-0 (GASP!) this year!?
