I’ll be the first to admit that these are a lot of work…. if done correctly. I’m not “a-lot-of-work” kinda gal. But I had to try these because frankly, I liked the name. “Little Jacks“. Doesn’t it sound like they just HAVE to taste good? Like they just don’t have a choice but to taste their very cookie-best?

I did make one mistake though. I tried to do the whole thing in one go-around. Not a good idea. These cookies are far less work if you do a little each day. If I could give these cookies a different name, I’d call them 3 day cookies.

Do the hazelnut thing one day, do the jam thing the next, and then make your cookies on day three. Much less of a headache. And yes, they are worth every day you spend on them. FABULOUS cookies!
