
There’s just something about a good lemon square that takes me back to my childhood. A time when family surrounded me for special occasions and wonderful celebrations.
My mom was well known for her amazing lemon squares. I remember as clearly as if I were holding one in my hand at this moment; the gooey, lemony filling with a wonderfully chewy crust. I would get lost in my own little world of perfect textures accented with an explosion of summer time lemony goodness. Oh what memories. I’ve GOT to ask my mother for her recipe!
But until I get hers, this lemon squares recipe will do just fine. I must say, while it’s not my mom’s recipe, it’s a pretty darn good substitute. I tend to like the crust more chewy than these, but then, my mom spoiled me for every lemon square out there. So please ignore my bias. These are darned good.
